Raise the Bar: Better Ice, Better Glassware & Smarter Beverage Solutions

27 Aug 2026, Posted by Karey Clements in Blog

Let’s be honest: a great drink can lose some of its magic pretty quickly when it’s served with bad ice in a boring glass.

Guests notice the details. They notice the oversized cube in an Old Fashioned. They notice the glassware before they ever take a sip. And when they order a frozen drink, they definitely notice whether it’s actually smooth or requires a spoon.

The beverage experience starts long before the first sip.

For operators, that doesn’t necessarily mean building a longer drink menu. It means making the drinks you’re already serving better, more consistent, and a little harder to forget.

From specialty ice and glassware to cocktails, mocktails, and frozen drinks, here’s what we’re watching behind the bar.

The Ice Is Part of the Drink

FH&W recently added Hoshizaki to our lineup of manufacturing partners, bringing our customers even more options for commercial ice and refrigeration. And with cocktails and bar programs in mind, their specialty ice is a pretty good place to start.

Because ice isn’t just there to keep the drink cold. The right size and shape can help control dilution, complement the drink, and make a much better first impression.

Hoshizaki offers several specialty ice options for the bar:

  • 1by1 Cube: Crystal-clear and uniform with a slow melt, making it a versatile choice for cocktails, mocktails, spirits, and elevated everyday pours.
  • 2by2 Cube: A larger-format cube designed for slow melting and minimal dilution. A strong fit for premium drinks that deserve a little more time in the glass.
  • 1.8-inch Sphere: Slow-melting with a presentation that stands out, especially in whiskey, bourbon, spirit-forward cocktails, and creative zero-proof drinks.

In other words, the ice can actually be part of the drink instead of an afterthought.

And while we’re talking ice, what happens behind the scenes matters too. Hoshizaki’s Clean Ice Ozone System treats incoming water to help control bacteria, yeast, mold, and biofilm within the ice machine, bin, and water path.

Better ice. Cleaner equipment. And a stronger starting point for whatever you’re pouring.

Now, let’s give that drink a glass worthy of it.

Great Drink. Now Put It in the Right Glass.

You wouldn’t spend time plating a great entrĂ©e and then toss it onto whatever plate happened to be closest.

Your drinks shouldn’t be any different.

Mikasa Hospitality’s ONIS glassware gives operators options that can take a beverage program in a few different directions.

The SPKSY Collection takes its inspiration from the speakeasy bars of the Prohibition era, combining classic influences with contemporary stems and faceted details. With coupes, cocktail glasses, martini glasses, Nick & Nora glasses, Gin & Tonic glasses, and more, it’s an easy way to give a drink a little personality before the guest even takes a sip.

It’s retro without making your bar feel like it got trapped in 1925.

For something more classic and versatile, the ONIS Kentucky Collection includes rocks, Double Old Fashioned, highball, iced beverage, and shot glasses in a variety of sizes.

And don’t reserve the good glassware for cocktails.

With zero-proof and low-alcohol drinking continuing to gain attention, mocktails have become an opportunity to give more customers the full beverage experience. Interesting flavors, specialty ice, the right glassware, and a thoughtful garnish can make a zero-proof drink feel just as intentional as anything else coming across the bar.

Because “just leave out the vodka” isn’t much of a mocktail strategy.

Pair a Kentucky Double Old Fashioned glass with one of Hoshizaki’s oversized cubes or spheres. Serve a colorful zero-proof spritz in SPKSY glassware. The drink may change, but the goal doesn’t: make it something your customer is excited to order.

Frozen Drinks Without the Frozen Drink Drama

Of course, not everything belongs on the rocks.

Frozen margaritas and daiquiris are bar staples, while frozen mocktails give operators another way to bring zero-proof options into the mix. Either way, blended drinks can bring plenty of appeal to a beverage menu.

They can also become a headache when your equipment can’t keep up.

The Blendtec Bar Blender is built specifically for commercial beverage environments, combining a powerful motor with variable speed controls and Blendtec’s WildSide+ Jar and blunt blade technology to pulverize ice for a smooth blend.

For operators, the important part isn’t the spec sheet.

It’s consistency.

Because a creative beverage idea is only valuable if your team can actually execute it when the bar is busy.

Nobody wants Drink #1 to be perfect and Drink #2 to come with ice chunks.

Your Beverage Program Doesn’t Need More for the Sake of More

There will always be another cocktail trend.

Another garnish.

Another ingredient everyone suddenly decides belongs on every menu.

We’re less interested in chasing trends just because they’re trends.

The better question is: What will actually improve the experience for your customers and make sense for your operation?

Maybe it’s upgrading the ice in your premium drinks. Maybe it’s choosing glassware that better fits your concept. Maybe growing demand for zero-proof options means it’s time to rethink how you’re approaching mocktails. Or maybe frozen drinks are an opportunity you’ve been avoiding because your current setup makes them more trouble than they’re worth.

FH&W works with operators to sort through those questions and find solutions that fit the way they actually work.

Because the goal isn’t to have the trendiest bar in town.

It’s to build a beverage program your customers want to come back to.
