Valentine’s Day Scones

Yields – 10 Large Scones
Prep Time – 15 min
Cook Time – 10-15 min
Ingredients
All Purpose Flour | 430 g | 2 ¾ cups |
Baking Powder | 30 g | 2 Tbsp |
Kosher Salt | 6 g | 1 tsp |
Sugar | 40 g | 3 Tbsp |
Dried Cherries | 80 g | ½ cup |
Dark Chocolate Chips | 100 g | ½ cup |
Butter (frozen) | 140 g | 12 Tbsp |
Heavy Cream (very cold) | 450 g | 1 ¾ cups |
Instructions
- Mix the dry ingredients – AP flour (sifted), baking powder, kosher salt, and sugar
- Grate frozen butter into the bowl of dry ingredients
- Gently toss the grated butter in the dry mix without mashing butter
- Once the butter is fully coated, grind the mix between your hands mixed resembles coarse sand
- Add dried cherries and chocolate cups to the flour/butter mix
- Pour the heavy cream over the mix and fold in using a spatula or spoon
- The dough will be slightly wet/tacky to the tough
- Lightly flour and remove from the bowl
- Form into a rectangle about ½”-¾” thick
- Cut the dough into 10 triangles using a dough cutter (place the dough in the freezer for 15 min for easier cutting)
- Bake at 400°F convection (425°F conventional) until golden brown (10-15 min)
