Spiced Eggnog Spiked with Bourbon

Yields 8-10 servings
Prep Time – 15 min
Ingredients:
- 6 eggs whites
- 6 egg yolks
- ¾ cup sugar (divided)
- 2 cups heavy whipping cream
- ½ gallon whole milk
- 1 cup bourbon (or more if you would like but not too much)
- 1 Tbsp. vanilla
- 1 tsp. cinnamon
- 1 whole nutmeg (freshly grated/zested)
- In a small bowl, beat the egg yolks with ½ cup of the sugar until thick in consistency
- In a Kitchen Aid stand mixer, beat the egg whites with ¼ cup of sugar until peaks form (about 4-5 min on high)
- Scoop the egg white mix into another bowl and use the stand mixer to whip the cream until peaks form (again about 4-5 min on high)
- Using a spatula, fold the yolk mix into the whipped cream until well incorporated
- Using the same spatula, fold in the egg white mix until well incorporated
- Stir in the milk, bourbon, vanilla, cinnamon, and ¾ of the nutmeg
- Make sure the mixture is well chilled then serve
- Garnish with the freshly grated nutmeg
