Bacon Onion Jam

Ingredients
- 1 # Bacon (rough chop)
- 3 each Red Onions (medium sliced thin)
- 1 shot Expresso
- ½ tsp. Red Pepper Flake
- ¼ cup Maple Syrup
- ¼ cup Brown Sugar
- ½ cup Apple Cider Vinegar
- ¼ tsp Nutmeg
- 1 tsp Thyme (fresh chopped)
- Salt (to taste)
Instructions
- Put all of the bacon into hotel pan.
- Cook bacon in oven at 350°F for 20-30 min. Bacon should look crispy on the edges but not burnt.
- Fold the onions into the bacon in the pan and cook for another 5-10 min. Onions should be soft and fragrant.
- Add the rest of the ingredients and mix well. Make sure the mix is spread out flat.
- Cook for another 35-45 min or until the liquid is thick and syrupy.
- Spread the jam onto a lined sheet tray and chill in a refrigerator or blast chiller.
- Once cooled down the jam can be canned or vacuum sealed for later use.
